People with Passion at the Heart of Monomono

Food & Craft \

Bandung is a place of harmonizing cultures, cuisines, and lives. As it grows it brings with it new dining options adding novel choices to the city. One such place is Monomono. Located in The Gaia Hotel Bandung, Monomono offers a comfortable social dining ambience with a full-service bar. The Nikkei cuisine-based menu coupled with Argentinian grill serves up South American flavours with Japanese infusion. The menu is definitely something new but it is all made with care and a love for the food and methods that celebrate the cuisine. Monomono’s kitchen is a vibrant place filled with exploration,  discovery, and creative ideas.

This atmosphere flows into the front of house as they push to offer something new to delight the people of Bandung and beyond. “Monomono must become the most exciting  dining destination for people who are looking for a creative and explorative dining experience  with a beautiful ambience in the city of Bandung.” Said Diky Lingga Wisnu, Director of F&B.  “The most rewarding aspect is seeing the amazement on our guest’s faces when they first  come to the restaurant and the excitement when our guests share their dining experience with friends and family.”

With the wide-ranging menu, everyone has their favorites, especially the chefs and they love to share their passion for food both through their cooking and suggestions. A  favourite shared among the chefs is Umami Salad. Using a complex mix of ingredients to create a unique blend of the sixth flavour, Umami Salad first impresses with its looks than with its flavour. Sous Chef Dikdik Suhendra points to Tenderloin Crudo as his personal choice because it uses the best quality fresh beef accompanied with Japanese ingredients resulting in a creamy taste.

The expertise and passion for something new don’t stop there as guests can peruse and enjoy an expertly made cocktail and mocktail. Prepared and guided by the head bartender, Kamal Sholahudin, the bar menu is filled with both classic and new drinks to explore and taste. Having started his bartending career overseas in the Middle East,  Kamal wants to bring his knowledge and love for mixology by preparing and recommending the best possible drinks.

"Passion for me is when we do something with sincerity and care, and that's what I feel behind the Bar, to always make sure that customers get their best drinks." - Kamal Sholahudin

With a focus on social dining with an encouragement to share dishes and ideas, the bar is an important part of the Monomono experience.

While both the Kitchen and the Bar can be the beating heart of a restaurant, it is the waiter or waitress who serves, guides and recommends the culinary destination when you arrive who is the face of a restaurant. Luckily Monomono has staff that offer knowledge, excitement and enjoyment at the prospect of making your dining experience both unique and memorable. Such as the waiter, Rahadiyan Halimawan who loves to express his passion and enjoyment for his role.

“When I successfully suggest wine to guests who have not taken wine before and don’t know anything about wine, and when they enjoyed my wine suggestion and ask me to serve them wine when they return to Monomono is a really rewarding moment.” - Rahadiyan Halimawan.

The ‘personal touch’ which is presented throughout the restaurant is consistently perpetuated by the Restaurant Manager, Rafael Satrio Wibowo, who reminds his staff every day, “nowadays giving the best service only is not enough, you must be able to create a WOW experience to the guests. Knowing who our guests are so we know what we have to give to them, and being attentive to them.”

Recognizing and knowing the guest is really embedded in all front of house staff and Monomono wants you to come back for another experience that will leave you wanting more and telling your friends, “I really had a wonderful time at Monomono, when are we going back?”
